"Creative and Memorable, But Mains a Bit Too Sweet"

This restaurant offers a truly innovative and memorable dining experience. The creativity in the dishes is evident, and certain highlights—like the gastronomical olive and the mackerel—were absolutely fantastic. However, after reflecting on the meal, I found myself puzzled by the main courses. They were unusually sweet, to the point where it challenged my palate. It made me wonder if the chefs were aiming to evoke a childlike experience through their flavor profiles. While playful, the sweetness in the mains was a bit overwhelming for my taste. Still, it's a unique culinary journey, and worth experiencing—especially if you enjoy bold, unconventional flavors.

"A Culinary Laboratory—Fascinating, But Not Always Heartfelt"

Disfrutar certainly earns its praise for being boldly experimental and pushing the boundaries of fine dining. Having dined here multiple times over the years, I’m consistently impressed—but rarely in love—with the food. It feels more like a high-concept culinary lab, where innovation takes the spotlight and flavor sometimes plays second fiddle. My first visit was back in 2017, and many of the creative ideas that wowed diners then still echo through the current menu. The experience often shifts from refined Spanish roots to global fusion, and ultimately into full-blown gastronomic experimentation. Scoring a table here is undeniably exciting, and the experience is akin to visiting a museum—intriguing, artful, and intellectually stimulating, but not necessarily something that stirs deep emotional connection. Still, it’s a place worth visiting, if only to admire the craft and vision behind each dish.

"A Long, Impressive Journey Through Flavor"

After 28 courses and 5.5 hours, we left the restaurant feeling fully satisfied. I thoroughly enjoyed each dish, and the pacing of the service felt just right throughout the entire experience. The team was also wonderfully accommodating, especially with the vegetarians in our group, which we really appreciated. While I personally found the main courses a bit on the salty side, that may just come down to individual taste. Overall, it was an exceptional and memorable dining journey—and I’m already looking forward to coming back!

"Inventive Cuisine with Room for Refinement"

The dishes were creative, showcasing impressive techniques and thoughtful preparation. Overall, everything tasted quite good, though I felt the plating leaned a bit old-fashioned and could benefit from a more modern touch. Service was very attentive, though at times it felt a bit too mechanical—polished but lacking a personal warmth. That said, it was still an enjoyable experience, and I’d consider returning to see what the seasonal menu has to offer!

An absolutely incredible experience that beautifully blends gastronomy and art. Every detail was thoughtfully crafted, making this an unforgettable journey from start to finish. Having dined at several top-rated restaurants, I can confidently say this ranks at the very top of my list. This wasn’t just about food—it was a sensory exploration that awakened parts of taste and smell we often take for granted. One standout was the sprout dish, which transformed simple herbs into a concentrated burst of aroma and flavor. A true masterpiece of culinary creativity.

"A One-Time Experience—Inventive, but Falls Short of Expectations"

While I can’t say the experience was bad, I do believe it didn’t live up to the hype—especially for a restaurant ranked among the top two in the world. We opted for the classic 28-course menu. All the dishes were good, but only a handful stood out as truly exceptional. The concept leans heavily on surprise and theatricality—dishes that burst in your mouth or visually mimic familiar ingredients while tasting completely different. It’s clever, like a culinary magic trick. But once you’ve seen the trick, it loses its wow factor, especially when the flavors don’t quite match the expectations set by the restaurant’s reputation. Service was fine, but again, not at the level I had hoped for. With more than seven different servers attending to us, the experience felt impersonal. A more dedicated, personalized approach would have made the journey through the menu feel more connected and immersive. In the end, it’s a unique experience worth trying once—but not one I’d be eager to repeat.
